Sancerre Sauvignon Blanc is a taut, mineral-driven Loire classic with citrus, flint, and subtle herbal notes shaped by its limestone soils.
It’s leaner and more refined than the rounder, fruitier Pouilly-Fumé, and far more restrained than the intensely tropical, pungent style of New Zealand Sauvignon Blanc.
Popular and widely available, it pairs beautifully with goat cheese, lean fish, oysters, shellfish, sushi, and delicate vegetable dishes.
The region’s cool, continental climate keeps acidity high and flavors crisp. Soil type strongly influences character: smoky and mineral (silex, flint), fruity and aromatic (limestone gravel), fuller and more structured (clay-limestone).
Fermentation in stainless steel is the norm to preserve purity. Most Sancerre is unoaked. Some producers use large neutral barrels for texture. A small number of producers experiment with acacia barrels, which add gentle floral tones and a softer, honeyed texture.
Aging on fine lees adds subtle creaminess and complexity.
Wines from silex (flint) soils are generally fuller, more powerful, complex, mineral-driven, and age-worthy expression of Sauvignon Blanc.
